Ingredients

For the Pork Chops:

  • 4 double-cut pork loin chops, bone in (about 2 inches thick)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

For the Stuffing:

  • 1 tablespoon olive oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chicken broth
  • Salt and freshly ground black pepper, to taste

Directions

  1. Prepare the Pork Chops:
    • Preheat your oven to 375°F (190°C).
    • Make a pocket in each pork chop by slicing into the side of the chop. Be careful not to cut all the way through.
  2. Make the Stuffing:
    • Heat 1 tablespoon of olive oil in a skillet over medium heat.
    • Add the onions and garlic, sautéing until translucent, about 3 minutes.
    • In a bowl, combine the sautéed onions and garlic, breadcrumbs, Parmesan cheese, parsley, and chicken broth. Mix until well combined. Season with salt and pepper to taste.
  3. Stuff the Chops:
    • Divide the stuffing mixture among the pork chops, stuffing each pocket generously.
    • Secure the openings with toothpicks to keep the stuffing inside during cooking.
  4. Cook the Chops:
    • Heat the remaining 2 tablespoons of olive oil in a large oven-proof skillet over medium-high heat.
    • Season the stuffed pork chops with salt and pepper.
    • Sear the chops for about 2 minutes on each side, or until golden brown.
    • Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  5. Rest and Serve:
    • Let the chops rest for 5 minutes after removing from the oven.
    • Remove the toothpicks, then slice and serve.
